In 2011 I was training for the Twin Cities Marathon. I wanted to qualify for the Boston Marathon. In my search for ways to fuel my body, I stumbled across the book,
"Eat & Run" by Ultra-Runner, Scott Jurek.
In his book, Scott outlined his journey into a plant-based diet. He claimed that it gave him more energy and quicker recoveries.
I decided I would go all in for 30 days and see how I felt on a 100% Plant-Based Diet.
To my complete surprise, I felt amazing. I had more energy and less soreness. I recovered from intense training much quicker.
From that point on, I was hooked. My journey in plant-based eating has morphed from benefits of self to benefits of animals and most importantly, benefits to our Earth.
PS: I qualified for Boston and ran it the year after the bombing.
